Here are some of my favorite recipes for baking sockeye salmon

1. Mike's mayo bake (the quick and easy):
Sockeye salmon filet (or coho filet)
Marinate with soy sauce for a few hours prior to baking
Sprinkle liberally with lemon pepper
Coat with a layer of Mayonnaise (Best Foods brand is preferred)
Cover thoroughly with grated Parmesan Cheese (Kraft brand preferred)
Bake in oven at 350degrees for 20-25 minutes, until Parmesan cheese layer has turned into a golden brown crust
2. Mayo Bake A-la-Wayne (The true original)
Sockeye salmon filet (or coho filet)
Sprinkle liberally with lemon pepper
Coat with a layer of Mayonnaise
Add a layer of chopped onions and chopped red onions
More lemon pepper
Add another coat of Mayonnaise
Cover thoroughly with grated Parmesan Cheese
If desired, also coat with string Parmesan Cheese
Bake in oven until Cheese turns into a golden brown crust
(Wayne, I admit I just 'winged' this recipe and it may not accurately reflect everything you do....sorry)
3. Teriyaki Salmon
Salmon filet
Marinate with soy sauce
Sprinkle with lemon pepper
Sprinkle with fish seasoning
Before baking or barbecuing; coat thoroughly with SunBird Rich and Thick Honey Teriyaki Sauce
Bake or barbecue until 'done' - prior to when the teriyaki sauce caramelizes and burns
FOR SMOKING YOUR SALMON:
I use a brown sugar and salt brine mixture
Soak salmon chunks in brine overnight
Drip dry salmon chunks
Through 'em on the smoker grill
Use 4-5 pans of wood chips over 8-10 hours of smoking time
Rotate the racks every 3 hours for evenly smoked chunks
Smoking chips preferred: Cherry, Hickory, Mesquite, Apple

1 Quart Water
1/2 Cup Salt
3/4 Cup Honey

1 Large Salmon Fillet
